Prep your belly scoring the fat and season well with salt and pepper
Place on a tray with whole garlic cutted in half fresh rosemary and pour same white wine around it cover up with silver foil and braised for 2 hours in the oven at 180 degrees
Let it rest and press in a tray for one day strain the jus
Prep your apple dice them and cook for 15/20 min in butter sugar salt and pepper puree in a blender and keep warm
Cut your belly in portions and fry skin side down until crispy and warm trough reduce the reserved jus with some stock and thickned with maizena and serve with apple puree and salad of vegetable sprouts
