Dip your sliced aubergine in a batter of flour milk and egg then deep fry until golden brown and set aside
Prepare your tomato sauce combine garlic olive oil basil and chopped tomatoes and cook for 20 min
Make your parmigiana layering aubergine tomato sauce parmesan mozzarella cheese black pepper and basil for three layers finish up with tomato sauce and parmesan and bake for 20 min at 200 degrees let it rest and serve warm topped with fresh basil leaves and parmesan shaving
