Freeze your salmon wrapped in cling film for 3/4 hours
Prep your cucumber slice them in ribbons and picled in a vinegar and sugar syrup with mustard seeds chili and citrongrass let them stand for a day or so
Dice your salmon dress with oil salt chili chopped coriander lemon zest soya and black sesame seeds place in a ring top with pickled cucumbers mixed vegetable sprouts and creamy lemon dressing around and serve
