Freeze your fresh tuna loin wrapped in cling film for 3/4 hours
Prep your avocado diced and dress with olive oil chopped coriander chili lime juice and set aside
Prep your crispy shallots chop them coat with flour and some semolina fry very quick and drain sprinkle with salt
Dice your tuna and dress with oil salt and pepper and grated ginger
Place your avocado in a ring top with the tuna press well remove the ring and top with crispy shallots and micro salad pour your dressing around made by soya rice vinegar toasted sesame oil and serve
