2 pork tender loins
Brine
Equal parts apple juice and distilled vinegar
Splash of olive oil
2 sprigs fresh rosemary
8-10 basil leaves
Dash of ground ginger
Dash of mustard powder
Crust
Equal parts Dijon mustard and brown sugar
Half a stalk of fresh rosemary
3 small sprigs of lemon thyme
Purée and smother on loins
Let stand on loins while grill fires up
Cook with indirect heat 40-50 min or until done. Let stand in foil for 10 minutes before serving
