Chop shallots and fry in oil add your arborio rice and cook for a minute or so then add a splash of white wine and let it reduce cook your risotto adding vegetable stock ladle by ladle for 15 minutes in the mean while make hour sundried tomato paste by soaking your dried tomatoes in hot stock for 10 min then blend with garlic basil and oil add to you risotto and cook for a couple of minutes more add butter and parmesan and work your risotto until is creamy garnish with roasted shallots baked cherry tomatoes and basil oil
