Panisse (chickpea flour cakes)
PORTIONS: 40 ISH SCALLOP SIZED PORTIONS
1/2 gallon milk
1 lb butter
2 shallot
3 cloves garlic
1 bunch thyme
S& white pepper
1.25 quarts chickpea flour
Bring ingredients excluding flour to boil. Strain into larger pot, re boil, remove from heat, then add flour, whisk to consistency. Robocoup till silky, pour to sheet pan to cool and congiele. Then cut with ringmolds and deep fry till golden brown
