Chicken pesto

2 cups shredded chicken breast
1/4 cup Greek yogurt
Salt and pepper
1 baguette
2 cups spinach
2 Roma tomatoes
8 oz mozzarella
For pesto:
3/4 cups basil leaves
2 cloves garlic
3 tablespoons pine nuts
1/2 cup Parmesan
Salt and pepper
1/3 cup olive oil
Emulsify oil in food processor to make pesto. In bowl combine chicken, 1/2 cup pesto, Greek yogurt, salt and pepper to taste. Serve on baguette with tomatoes and mozzarella.
