Rib roast w/ horseradish cream

Rib roast (prime rib?)
3 tablespoons prepared mustard
1 1/2 cups heavy cream
1/4 cup horseradish
1 1/2 teaspoons lemon juice
1/2 teaspoon white sugar
1 cup chopped and toasted walnuts
Salt and pepper to taste
Roast meat at 425 degrees for 45 minutes then loosely cover with foil and continue roasting (internal temperature 125-135). Combine all other ingredients and whisk until firm peaks form.
