1 bulb garlic
3 pounds baking potatoes
6 slices turkey bacon
4 cups chicken broth
1 1/2 tablespoons fresh thyme
1/2 teaspoon table salt
1/4 teaspoon black pepper
6 tablespoons sour cream
6 tablespoons shredded cheddar
6 tablespoons scallions
Preheat oven to 400. Rinse potatoes and pierce with a fork. Wrap entire garlic bulb in foil and place with potatoes in oven. Bake garlic until soft (about 45 minutes) continue baking potatoes another 15 minutes or so. Cook bacon and drain. Squeeze pulp from garlic bulb into pan and mash potatoes over it. Gradually stir in broth, thyme, salt and pepper. Add other ingredients to bowl as you're serving.
