INGREDIENTS
2 1/2 cup of flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup honey
1/2 cup brown sugar
1 cup mashed banana(2 large)
1/4 cup (greek) yogurt
1 large egg
3/4 cup of milk
DIRECTIONS
preheat oven to 325°F
spray about 15 muffin tins with non stick spray
in LARGE bowl, add:
flour
salt
cinnamon
baking soda
*toss together until mixed
in a SEPARATE bowl, add:
honey and brown sugar
*stir until completely mixed
mashed bananas
yogurt
beaten egg
slowly pour the wet ingredients into the dry bowl ingredients
mix together
it will be very thick
add the milk slowly
this will smooth it down some
dont overmix!!
once completely mixed, pour batter into about 15 muffin tins
to ensure even baking, fill empty muffin tins halfway with water
put in oven for 16-18 mins
*time will vary depending on size of muffins
take out and let cool
muffins will stay fresh and moist for 5 days
