Cod Chowder

2 lbs of cod, diced
3 cups Quartered baby Yukon potatoes
2 cups diced carrots
1 yellow onion, diced
6 cloves garlic, minced
2 cups diced celery
32oz chicken stock
Milk & flour roux, 1/2 cup
1 pearl jam
6 strips bacon
1 cup milk
Salt, pepper, paprika, onion powder, old bay. 2 teaspoons each or to taste.

Cook bacon crispy, dice it, set aside. Sauté onions and garlic in coconut oil. When onions are translucent, add celery, carrots and potatoes. Stir often for 5 minutes. Add all ingredients to pot (only half the bacon). Let simmer for at least 40 minutes, add cup of beer (optional). Sprinkle diced crispy bacon on top.
