Pan seared Scottish salmon(6oz)’ seasoned with lemon pepper.
2 jumbo shrimp
8 mussels(New Zealand)
1 oz Spanish onion
1 oz roasted jalapeño
1 oz roasted banana pepper
3 oz roasted mini sweet peppers( whole stem removed)
Tbl garlic
Tbl minced shallots
2 oz fennel
3-4 blistered grape tomatoes
Tsp fresh thyme
4 oz fish stock
2 oz stewed San marzano tomatoes
Tbl fresh chiffonade basil
S&P to taste
Crispy leeks.
