Spicy Quinoa Stuffed Avocado
PORTIONS: 1-2 PEOPLE
1 Avocado
Quinoa of choice
Chopped pepper
Chopped red onion
Feta cheese
Balsamic dressing
Chili powder
Cut avocado vertically in half and remove the pit. Cook quinoa and pile a handful of it onto both halves of the avocado. Now, place your desired amount of pepper and red onion on top. Add desired amount of feta cheese and sprinkle on chili powder for spice. Drizzle balsamic over entire creation.
