Roast chicken

Ingredients:
1 chicken
Salt and pepper
Butter
1-2 lemons (halved)
1/2 sweet onion (sliced)
3-4 potatoes (cubed)
3-4 carrots (chunked)
1 heads garlic (halved) (sub with garlic powder)
Rinse chicken and pat inside and outside dry with paper towels
Liberally salt and pepper inside of chicken and place lemons and garlic inside
Rub butter all over chicken before seasoning outside with salt and pepper.
Place chicken in roasting pan on top of vegetables (allows juices to cook into veggies)
Tie off chicken, and place in oven at 425 for 90 minutes (remove chicken when juice in breast runs clear)
