750 g Bakers flour
260 g egg yolks
160 g egg whites
20 g of salt
Small amount of water
Place all ingredients into mixer and begin mixing
May need a little water or little flour
Try to keep a reasonably dry dough
Allow to rest before running through Pastor machine,
(Pasta machine )
Cook in boiling salted water for a couple of minutes till the pastor is al dente'
Strain and refresh ice slurry,
Add oil so it doesn't stick together
Serve or portion and freeze.
