Capresse Chicken and Pasta

4 medium chicken breast

1 can of petite diced sun dried tomatoes

1 cup of fresh basil leaves

1 cup of mozzarella

2 tbsp of extra virgin olive oil

2 cloves of garlic (chopped roughly)

Salt to taste

2 cups of penne pasta (cooked)


Instructions:

Cook the chicken in a large pan on med-high with the chopped garlic and olive oil

Meanwhile, boil the water for pasta and cook the penne with salt to taste

After the chicken is cooked, add the tomatoes and basil leaves

Add the cooked pasta to the chicken and veggies

Let cook on medium for about 5 mins to let flavors meld

Serve with mozzarella on the top at the last few minutes
