Wild Rice Salad

1/3 cup olive oil
1/3 cup shallots
1 TBSP mustard
1 TBSP lemon juice
1 tsp salt
1 tsp pepper
1/2 tsp lemon zest
3 cups water
1 cup wild rice
2 cups arugula
1 cup pomegranate seeds
1/3 cup pine nuts, toasted
1/4 feta cheese, crumbled
Cook wild rice in water. Let cool to room temp.
Add arugula, pomegranate seeds, pine nuts, feta, and vinaigrette, and toss together. Serve.
