Low cal omlette

3 egg whites
1/2 cup spinach
1/2 cup onion
4 grape tomatoes
Salt and pepper, to taste
Preheat oven to 375 speed bake
Saute onion until translucent
Add spinach and cook until just wilted
Place spinach-onion mixture in a small glass dish and crack 3 egg whites over top.
Add salt, pepper, and sliced grape tomatoes
Bake in oven for 17 minutes
