Homemade Gnocchi peas/parmesan

1) Prep the Gnocchis
- Cook to big potatoes with the skin
- once cook take off the skin
- mash nicely the potatoes
- add a spoon of ricota cheese
- salt / pepper the mixture
-add some flour (cover the potatoes and ricotta)
- add one eggs (mix it before)
-add some thyme
- work the mixtures until it's nice amd smooth ( you can add some flour) need something nice and soft
- make a ball and cut the ball in half
- Roll it gentle like a big long cigare
-at this time do not add any flour
- flour your knife then the mixture doesn't stick
- cut the roll , nice pieces
- put your finger in the flour and push pieces after pieces in the middle (make it like a pillow)
2) cook the gnocchis
- water and olive oil in a pan
- bring it to boil
- cook the gnocchis
- turn the pan to stop them to stick at the bottom
-gnocchis are cooked when they start flowting
- get a pan on, add olive oil
- gently take the gnocchis off the pan
- fried the gnocchis in the pan
- add pepper
-sauter both side and add peas and butter
- add some fresh thyme over the peas
- zest a lemon on the top
- serve it with greated parmesan cheese.
DONE.
Give vegetables attitude !
