- 3 egg yolks
- few crushed coriander seeds
- zest 1 grapefruit (pink grapefruit it's better ) and squeeze half of it
- Whisk and cook to a Bain Marie
- when it's nice and theek finish with olive oil
- saisoning, add a bit more grapefruit juice.

DONE.
