Herb Crusted Rack of lamb

1) Lamb
- Salt / pepper the Lamb rack
- Seal on hot pan
- get some color
( No color = no flavour )
-skin side down ( 7 to 8 minutes / oven 180°C)
2)Herb crust
- white bread mix (raw bread crumb)
-Parlsey/rosemary/thyme
-greated Parmesan
- little bit of olive oil
-Robot coupe everything
3)Finished
- spray Dijon mustard on the rack while it's still hot
- and finish with the bread crumb
-finish in the oven for crisp the bread crumb (3 to 4 minutes )
DONE.
