Spicy Thai Rice

Spicy Thai Rice – created on the CHEF CHEF app for iOS Aaron (Matthew Mikell)

1 bag of TJ's frozen brown rice
1/2 cup crushed wasabi peanuts
1 tbls Sriracha
4 mini bell peppers sliced in strips
1/2 breast TJ's grilled chicken
1 tsp red pepper flakes
1/2 tsp curry powder
1 tbls canola oil
1/2 lime
10 leaves romain lettuce (garnish)

•1) While you microwave the brown rice, heat the oil in a large pan over medium heat. Once the oil is heated, add the sliced bell peppers and chicken and start sautéing.

•2) When the peppers are sautéd, add in the brown rice. Make sure you're watching the heat as not to burn the rice. Once you have stirred and mixed the peppers, chicken, and rice add in the crushed wasabi peanuts, Sriracha, red pepper flakes, and curry powder.

•3) Constantly stir the rice for about 4 to 6 minutes until all the flavored are well blended (tasting helps).

•4) Turn of the heat and spoon desired amount into a bowl. Thinly slice the lettuce and top on the rice. Now squeeze the lime juice on top. You may also want to add extra Sriracha and wasabi peanuts.
