Potato pie

Potato pie – created on the CHEF CHEF app for iOS sally (Sally)

2 tsp olive oil
120g bacon
2 onions thinly sliced
3 garlic cloves
900 g russet potatoes
Sea salt and pepper
2 cups diced cheese
1/2 tsp nutmeg
1/2 tsp fresh Thyme leaves
2 tbl unsalted butter
1 egg yolk
1 tbl double cream
2 sheets pastry

In pan heat 1 tsp oil and cook bacon until crisp. Set aside Heat more oil and cook onions until golden season with salt and pepper . Set aside. Pre heat oven 200c. Divide half dough line pie dish leaving over hang. Add layer half potatoes. Season and layer onion, bacon and cheese. Sprinkle with nutmeg and thyme scatter the bits of butter on top and finish with layer of remaining potatoes. Season with salt and pepper. Whisk egg yolk with cream to make egg wash. . Cover with second layer of pastry . Brush with remaining egg wash. Bake until golden 40 to 45 minutes .
