900g new potatoes peeled
150 g unsalted butter
Sea salt and pepper
2 onions thinly sliced
Bunch parsley

Pre heat 180c
Par boil potatoes in salted water 10 to 15 minutes. Drain and rinse in colander. Let cool few minutes then slice into 3 to 4 mm thick slices . In pan melt 2 tbl butter..add one quarter of potatoes and fry, season with pepper until golden about 6 minutes. Cook in batches. Then cook onions until golden about 5 minutes . Add potatoes and mix gently to combine. Transfer to baking dish and bake 10 minutes. Sprinkle with parsley and serve
