3 eggs, separated
pinch salt
¼ ts vanilla essence
½ cup castor sugar
2 ts hot water
⅓ cup wheaten cornflour
⅓ cup custard powder
1 Tb plain flour
1 ts baking powder
Sift cornflour, custard powder, flour and baking powder together
In a bowl beat egg whites and salt until soft peaks form
Gradually beat in castor sugar a little at a time, beating until stiff
Add egg yolks and vanilla, beat only until combined
Add sifted dry ingredients to egg mixture and folio in lightly, using a spatula or spoon adding hot water as required, do not stir
Divide mixture evenly between prepared pans
Bake until well risen, evenly brown and springy
Carefully remove cakes from tins and cool on cake cooler
Add whipped cream between cakes and dust the top with icing sugar
