1. wrap pancetta slices around pork medallions
-insert rosemary stick to keep pancetta in place
2. coat each side of pork with flour
3. brown each side in oil
-season
4. deglaze
5. put in oven
6. sauté rosemary
7. add pancetta
-deglaze
-remove when brown and crispy
8. let sauce thicken
9. add garlic
