Orange & Almond Cake

2 Oranges
4 Eggs
200g Caster Sugar
190g Ground Almonds
1tsp Baking Powder
250g Mascarpone
Place whole oranges in a saucepan and simmer on a medium heat for 40 minutes. Drain and repeat 2 times.
Transfer oranges to a food-processor, process to a pulp and set aside to cool.
Whisk eggs and sugar till thick and pale, then fold through almonds and baking powder followed by the orange pulp.
Pour into lined baking tins and set in a 180.c oven for 40 - 50 minutes.
Once cooled, spoon mascarpone between each layer.
