Simple Egg Salad

6 eggs
1/2 cup mayonnaise
1/2 teaspoon curry powder
Pinch of salt
Pinch of white pepper
Boil eggs for 10-12 minutes till hard boiled.
Peel and roughly chop eggs
In a bowl, combine chopped eggs, mayonnaise, curry powder.
Season with salt and pepper
Serve on home baked bread (see my recipe for Pain en Cocotte)
