One medium eggplant
I cup baby spinach
6oz portobello mushrooms
One large sweet potato
1 cup marinara sauce
1/2 cup feta cheese
1/2 tbsp butter
1 tsp olive oil
Garlic cloves
Fresh parsley
Oregano, salt, pepper, cinnamon, nutmeg
Lemon juice

-Bake potato for 1 hr 15min at 350. Remove from oven & allow to cool. Mash with lemon juice, parsley, nutmeg, cinnamon, salt, & pepper.
-Salt and slice eggplant and place in coriander for 30 min. Glaze with olive oil, lemon juice, oregano, and pepper. Bake 10min on each side at 350.
-Sauté mushrooms with garlic, parsley, butter, salt & pepper.
-Assemble by layering, in order: eggplant, spinach, mushrooms, mashed potato, marinara sauce, feta.
-Bake for 20min at 350.
