Italian Feather Bread

1 Tbs yeast
1 Tbs sugar
1/2 cup warm water
1/3 stick butter
1 tsp salt
3/4 cup boiling water
4-5 cups flour
Dissolve the yeast and sugar in warm water
In large bowl, pour boiling water over butter to melt it, add salt
After yeast has proofed, add to butter bowl
Start adding flour 1/2 cup at a time, mixing well
When dough starts holding shape, turn out into well floured surface
Knead in flour until no longer sticky
Continue kneading until done
Split dough in half
For each chunk, roll and stretch into 8in by 12in rectangle, roll into log
Place each log onto well flour baking sheet, make several diagonal slices in top
Let rise for one hour
Bake at 400° F for 20 min
