1 cup quinoa, 3 cups broccoli, 1 cup cooked chicken breasts, 1/2 cup carrots, 1/2 cup kalamata, 1/2 cup roasted red peppers, 1/4 cup grated Parmesan cheese, 1/2 cup feta crumbs, 1/2 cup olive oil, 2 tbsps lemon juice, 1/2 tsp salt, 1/2 tsp pepper.

Cook quinoa. Transfer to bowl and toss. Add broccoli, chicken, carrots, olives, red pepper, Parmesan, and feta. To make dressing, place oil, lemon, salt, pepper, in a mason jar with lid. Close lid and shake. Pour over quinoa and stir to combine.
