Honey, Chicken, & Veggie Kabob

1/2 cup soy sauce, 1/2 cup honey, 1/2 tsp black pepper, 2 garlic cloves, 1/3 cup vegetable oil, 2 1/2 lbs cubed chicken breasts. 2 red pepper, 1 purple onion, 8 oz white mushroom, 2 1/2 cups pineapple chunks.
Whisk together soy sauce, honey, pepper, garlic, and oil. Measure 1/4 cup marinade and place in covered container in fridge for grilling. Place cubed chicken in large ziploc bag and veggies in another bag. Pour half of the remaining marinade over the chicken and other half over vegetables. Seal bags and refrigerate for at least 2 hours. Grill skewers until chicken is cooked. Use reserved marinade to brush over chicken during final minutes of cooking.
