Spring Herb Quinoa Patties

2 cups cooked quinoa, 2 eggs, 2 tbsps green onion, 2 tbsps parsley, 1/2 cup cheese, 1/2 cup bread crumbs, 1/4 tsp salt.
Combine everything but quinoa in a bowl and mix. Fold in cooked quinoa until mixture is even. Heat a large frying pan and drizzle with oil on med. Form patties with mixture and plop them into frying pan. Cook each side for 3 minutes. Serve with more freshly grated cheese on top.
