6 slices bacon, 1 whole onion, 3 whole carrots, 3 celery stalks, 6 whole potatoes, 8 cups chicken broth, 3 tbsps flour, 1 cup milk, 1/2 cup heavy cream, 1/2 tsp salt, pepper, 1/2 tsp Cajun spice mix, 1 cup grating cheese.
Cook bacon and chop. Chop onions, celery, carrots and cook in skillet for 2 minutes. Then add diced potatoes. Cook for 5 minutes, seasoning with salt, pepper, and Cajun spice. Pour in broth and bring to a gentle boil. Cook for 10 minutes. Whisk together flour and milk and pour into soup. Cook for another 5 minutes. Remove 2/3 soup and blend in a blender. Pour it back into soup pot and stir. Stir in cream. Add salt and pepper if needed. Top with grated cheese and bacon bits.
