Roasted Cauliflower & Romano

1 cauliflower head, 3 tbsps olive oil, 3/4 tsp salt, 1/4 tsp pepper, 3 tbsps pecorino Romano cheese.
Preheat oven to 430. Line baking sheet with aluminum foil. In a bowl, combine cauliflower, olive oil, salt, pepper and toss. Transfer to baking sheet and roast for 20-30 minutes, stirring occasionally. Sprinkle with grated cheese and add extra salt and pepper if necessary.
