Chicken Fried Rice
PORTIONS: 2
2 cups rice, 1 chicken breast, 1/2 cup frozen mixed vegetables, 2 green onions, 1 garlic clove, 1 egg, 3 tsps sesame oil, 2 tbsps soy sauce.
Precook chicken. Whisk egg with 1 tsp oil in small dish. Heat 1 tsp oil in skillet over med high heat and add frozen mixed veggies and green onions. Stir fry for 2 minutes. Add garlic and cook for 30 seconds. Add egg, sesame oil and scramble. Add chicken, rice, and soy sauce. Mix together and serve.
