Chocolate Chunk Muffins

6 tbsps of unsalted butter, 4 oz of chocolate, 2 cups flour, 2/3 cup sugar, 1/3 cup unsweetened cocoa powder, 1 tbsp baking powder, 1/2 tsp salt, 1 1/4 cups buttermilk, 1 egg, 1 tsp vanilla extract.
Preheat oven to 375. Spray muffin pan. Melt the butter and half the chocolate together in a bowl. In a large bowl, whisk together the flour, sugar, cocoa, baking powder, baking soda, salt. In another bowl whisk together buttermilk, egg, and vanilla extract. Pour liquid ingredients over the dry ingredients and whisk together. Stir in remaining chocolate chunks. Bake for 20 minutes.
