Pimento Cheese

2 cups grated white cheddar (10 months aged minimum)- prefer Cabot
2 cups grated sharp cheddar (12-15 months aged minimum)- prefer Tillamook
1 cup mayo- prefer Dukes
1 teaspoon good hot sauce
1 1/2 cups chopped roasted peppers and juice (2 each yellow, red, orange)
Mix all ingredients together. Add the mayo a little at a time ( you don't have to use it at all, it is there in case your cheese is a dryer cheese). Work it with your hands until it holds together.
Cover and refrigerate for 24 hours to let cheese and flavored set.
