Apple Pie

6 apples (peeled-cored-sliced)
1/4c white sugar
1/4c brown sugar
1T lemon juice
1t cinnamon
1/4t nutmeg
1/4t salt
2T unsalted butter
1 1/2T cornstarch
1. Combine the apples with the sugars, lemon juice, cinnamon, nutmeg, and salt
2. Let sit for at least 30min, then strain the apples gathering the juices, about 1/2 a cup
3. In a heat proof cup combine the juice and the butter
4. Bring to a boil or until it is lightly car analyzed
5. Transfer the apples into a bowl and mix with the cornstarch
6. Pour the liquid over the apples and toss
7. Place the apples into the crust
8. Seal with topping on top
9. Bake @ 425•F on the lowest rack for 45-55min
