(English version below)

5 dl vand
25 g gær
5 g salt
350 g hvedemel
150 g rugmel

Vand, gær og salt røres godt sammen.
Melet hældes i og der røres i minimum 10 minutter (bedst på en maskine) hvorefter dejen skal være meget elastisk og homogen.

Sæt til at hæve ca. en time ved stuetemperatur.

Tænd ovnen på max temperatur (fx 270 grader).
Hæld godt med mel på et bord, vend dejen ud på bordet og drys mel henover dejen.
Brug en kniv eller paletkniv (eller bagespatel) til at dele dejen ud i 10 boller. Arbejd hurtigt og undgå at dejen klistrer fast til bord og redskaber.

Bag bollerne i ca. 25 min.

5 dl water
25 g yeast
5 g salt
350 g flour
150 g rye flour

Mix water, yeast and salt thoroughly.
Add all flour and stir for at least 10 minutes (preferably on machine) until the dough becomes elastic and homogeneous.

Leave to rise approx. one hour at room temperature.

Heat the oven to maximum temperature (eg, 270 degrees).
Sprinkle a layer of flour on the kitchen board, pour out the dough and sprinkle with flour.
Use a knife or spatula to divide the dough into 10 balls. Work quickly (and use extra flour) to prevent the dough from sticking to the kitchen board and utensils.

Bake for approx. 25 min.
