3 oz Romaine Lettuce (chopped)
1 oz Nappa Cabbage (chopped)
1 oz Baby Spinach
1 oz Radicchio (chopped)
1 oz Mandarin Orange
0.5 oz Baby Bell Peppers (Julienned)
0.5 oz Edamame
0.3 oz Red Onion (fine Julienne)
0.5 oz Wonton Skin (julienned)
6.5 oz Salmon
2 oz Sesame Ginger Dressing
Grill salmon to internal temp of 140 degrees. Glaze salmon with 0.5 oz of dressing, Toss the leaves and dressing together, top with veggies and wonton skins, and finish with salmon on top.
