-6 cups crab meat
-3 cups mayonnaise
-1 1/2 cups whole grain mustard
-1/2 cup parsley (minced)
-1/2 cup green onion (small dice)
-1 yellow bell pepper (brunoise)
-1 red bell pepper (brunoise)
-1 green bell pepper (brunoise)
-salt & pepper to taste
-combine all ingredients in a bowl.
-Prep out 12 portions of about 1 cup of product on a sheet pan, shaped into a wide cylinder.
-sear both sides of the cakes on a flat top or in a saute pan.
-bake for 6-7 min.
- serve with Remoulade or Tartar sauce.
