Prawn & Lime Aioli Cocktail

Ingredients:
• 40 medium cooked prawns (1kg)
• 100g baby rocket leaves
• 1/2 cup (150g) mayonnaise
• 2 teaspoons finely grated lime rind
• 2 tablespoons lime juice
• 2 garlic cloves - crushed
• 1 red Thai chili - seeded - slice thinly
Directions:
1) Shell and devein prawns, leaving
tails intact.
2) Toss prawns with rocket in large
bowl; divide among serving
dishes.
3) Combine mayonnaise, rind, juice
and chili in small bowl; spoon
evenly over prawns and rocket.
