1 onion chopped thinly
1/2 cup instant oats
1/2 dry bread crumbs
1/3 cup toasted, slivered almonds finely chopped
1 cup low fat cottage cheese
2 egg lightly beaten
Herbs and spices as desired
Salt abc pepper
Extra dry bread crumbs
2 420g tins of tomato soup
1/3 red wine
Combine all the ingredients, except the tomato soup and red wine, in a bowl. Form into small balls and roll in extra bread crumbs. Refrigerate for at least 30 mins.
In a large frying pan shallow fry the balls until browned. Add the tins of tomato soup and 1 tin of water, bring to the boil. Add the red wine and simmer until half the liquid is reduced.
Serve with pasta.
