Parmesan and avocado pasta
PORTIONS: 2 SERVES
Ingredients:
1 1/2 avocados
1 shallots
5 cherry tomatoes halved
Parmesan to taste
Pasta of any type(150g)
Salt and pepper to taste
Parsley to taste
2 table spoons of Olive oil
Half a lemon(juiced)
Method:
Cook pasta for 8 to 10 mins in boiling water
When pasta
is cooking blend all ingredients together except cherry tomatoes and Parmesan and when a paste has formed and pasta is cooked combined sauce and pasta and garnish with tomatoes and Parmesan to taste.
