Coconut curry chicken
Chicken thighs whole
3-4 tbsp Curry paste
2-3 Onions
4 cloves of Garlic
1 tbsp honey
2 Lemon
1 Chili
1 tbsp Soy sauce
3 cans Coconut milk
Seasoning to taste
Rice
Debone chicken thighs.
Heat water for rice.
Fry the curry in oil, and after a minute or so add onions. After 5-6 minutes add garlic soy honey chili and fry for 3-4 minutes. Then add the milk, and leave it simmering. Start cooking your rice.
Fry the chicken in oil, until done but still tender.
Season the now reduced sauce with salt pepper and lemon juice, to add some acidity. Finish it in a blender to give it a smooth texture.
Finish with plating as you wish.
