Seitan:
1 ½ cups vital wheat gluten*
¼ cup nutritional yeast flakes*
1 cup + 2 tablespoons. ice water
1/3 cup low sodium soy sauce
1 tablespoon ketchup
2 cloves garlic, finely minced
1 teaspoon lemon zest
2 teaspoons paprika
¼ teaspoon cumin
1 teaspoon black pepper
½ teaspoon chili powder

Marinade:
- 1/2 cup light soy sauce
- 1/4 cup sesame oil
- 1/4 cup fresh lime juice
- 2 tbsp rice vinegar
- 2 tsp Sriracha
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 2 tbsp mined fresh ginger

Pickled veg:
1 cup sliced cucumber
1/4 thinly sliced red onion
1/2 c julienned carrot
1/2 c julienned daikon or radish
1 1/2 tsp kosher salt
1 tbsp sugar more if you desire a sweeter taste
1/4 c rice wine or apple cider vinegar
1 tsp sesame oil
1 tsp-3 tsp red pepper flake
