• 6 chicken thighs, skinned, boned
• 2 teaspoons soy sauce
• 1/3 cup crunchy peanut butter
• 2 tablespoons lemon juice
• 150g can coconut cream
• 1 tablespoon sweet chili sauce
• 1/4 teaspoon garam masala

METHOD:
1. Preheat oven 190.
2. Cut chicken in long, thin strips.
3. Put chicken & soy sauce in a
bowl. Stir to cover chicken with
sauce.
4. In another bowl mix peanut butter
& lemon juice
5. Add coconut cream, chili sauce
and garam masala - mix well
6. Mix 2 tablespoons peanut sauce
into chicken
7. Thread chicken onto skewers
8. Glad bake tray - put into oven for
20 minutes depending on each
side - firm is cooked - white in
middle
9. Put peanut sauce in a small pan,
cook for 5 mins until hot - spoon
over chicken and serve
