Quinoa Salad
PORTIONS: 8-10
1 c quinoa
2 c water
2 ears of corn
2 large tomatoes
1 bunch cilantro
1 bunch chives
1-2 heads garlic
1 jalapeño, de-seeded
1 can black beans
salt & pepper
1 avocado
Cook the quinoa & roast the corn. Let cool. Chop herbs & vegetables. Mince garlic & pepper. Drain & rinse black beans. Juice lime. Cut corn kernels off cobs. Mix everything in large bowl. Salt & pepper to taste. Refrigerate 1+ hour. Add avocado just before eating. Serve with tortilla chips or on tostadas.
